Harvest Stew
This stew is perfect for a chilly autumn evening and its super simple to make. I always start to crave soups and stews once the weather starts to cool down.
you will need:
carrots, diced
parsnips, diced
turnips, diced
onions, diced
ground bison meat
potatoes, diced
garlic, minced
rosemary, 1/2 tbsp
parsley, 1/2 tbsp
thyme, 1/2 tbsp
salt and pepper
olive oil
beef broth
Note: If you can't get a hold of bison then ground beef will do just fine.
1. Season the meat with salt and pepper. Cook in soup pot until brown. Remove from the pot and set aside.
2. Put some olive oil in the pot and then add the garlic and onion. Sweat the onions for a minute or two.
3. Add in all your veggies, stiring thoroughly. Add in the herbs. Cook the vegetables for a couple of minutes.
4. Add the meat back to the pot. Pour in the broth, enough to cover everything. The more broth you add the more soupy it will be.
5. Bring it all to a boil, then reduce heat to simmer for about 20-30 minutes, until the veggies are cooked through.
Once the vegetables are soft but not mushy it is ready to serve and enjoy. I think a piece of garlic toast on the side is a great compliment to this stew. Feel free to add or substract any veggies you like, bearing in mind that root vegetables work best for this recipe.
